Here's a basic recipe for seafood paella:
Ingredients: - 1 cup Arborio rice (or any short-grain rice) - 1 lb mixed seafood (such as shrimp, mussels, clams, squid) - 1 onion, finely chopped - 3 cloves garlic, minced - 1 red bell pepper, diced - 1 tomato, diced - 1/2 cup frozen peas - 4 cups seafood or chicken stock - 1 teaspoon paprika - 1/2 teaspoon saffron threads (optional) - 1/4 cup white wine (optional) - Salt and pepper to taste - Fresh parsley, chopped (for garnish) - Lemon wedges (for serving)
Instructions: 1. Heat some olive oil in a large pan or paella pan over medium heat. 2. Add the chopped onions and cook until they become translucent. 3. Stir in the minced garlic, diced bell pepper, and tomato. Cook for a few minutes until they soften. 4. Add the rice to the pan and let it toast for a couple of minutes, stirring frequently. 5. In a separate pot, bring the stock to a simmer. If using saffron, add it to the stock for enhanced flavor and color. 6. Begin adding the stock to the rice mixture in the paella pan, about 1 cup at a time. Stir well after each addition and let the rice absorb the liquid before adding more. 7. Once you've added half of the stock, add the paprika and season with salt and pepper according to your taste. 8.
