Ingredients:

- 2 large eggplants

- 4 large zucchinis

- 6 large tomatoes

- 2 red onions

- 4 garlic cloves

- 1 red bell pepper

- 1 yellow or orange bell pepper

- 1/4 cup olive oil

- Salt and pepper to taste

- Fresh thyme and rosemary sprigs for garnish


Instructions:


1. Preheat the oven to 375°F (190°C).


2. Slice the eggplants, zucchinis, and tomatoes into thin rounds. You can use a mandoline slicer to make it easier.


3. Dice the red onions and bell peppers. Mince the garlic cloves.


4. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic and sauté until soft and fragrant.


5. Add the bell peppers and continue cooking for a few minutes until they start to soften.
