easy beef stew

 Here's an easy beef stew recipe:



Ingredients:

- 1 kg beef stew meat, cubed

- 2 tablespoons olive oil

- 1 onion, chopped

- 2 garlic cloves, minced

- 3 carrots, peeled and chopped

- 2 celery stalks, chopped

- 1 tablespoon tomato paste

- 2 bay leaves

- 1 teaspoon dried thyme

- 4 cups beef broth

- 2 cups potatoes, peeled and chopped

- Salt and pepper to taste


Instructions:

1. In a large pot, heat the olive oil over medium heat.

2. Add the onion and garlic and cook until the onion is translucent.

3. Add the beef and cook until browned on all sides.

4. Stir in the tomato paste, bay leaves, thyme, and beef broth.

5. Bring to a simmer and cook for 1 hour.

6. Add the carrots, celery, and potatoes and continue to cook for another hour or until the vegetables are tender.

7. Season with salt and pepper to taste.

8. Serve hot and enjoy your delicious beef stew!
