Pork, Pepper and Rice Noodle Soup

Here's a recipe for pork, pepper, and rice noodle soup:

Ingredients:
- 1 pound pork (preferably sliced into thin strips) - 1 tablespoon vegetable oil - 1 red bell pepper (sliced) - 1 green bell pepper (sliced) - 4 cups chicken or vegetable broth - 2 cloves garlic (minced) - 1 tablespoon soy sauce - 1 tablespoon fish sauce (optional) - 1 teaspoon chili flakes (adjust to your spice preference) - 6 ounces rice noodles (cooked according to package instructions) - Salt and pepper to taste - Chopped green onions and cilantro for garnish

Instructions:
1. Heat the vegetable oil in a large pot over medium heat. Add the pork strips and cook until browned and cooked through. Remove the cooked pork from the pot and set aside. 2. In the same pot, add the minced garlic and sauté until fragrant for about 1 minute. Add the sliced bell peppers and cook for another 2-3 minutes until slightly softened. 3. Pour the chicken or vegetable broth into the pot and bring it to a boil. Reduce the heat and let it simmer for about 10 minutes to allow the flavors to meld. 4. Stir in the soy sauce, fish sauce (if using), and chili flakes. Season with salt and pepper to taste. Simmer for an additional 5 minutes. 5. While the soup is simmering, cook the rice noodles according to the package instructions, then drain and set aside. 6. To serve, divide the cooked rice noodles among bowls. Ladle the hot soup over the noodles, then top with the cooked pork strips. Garnish with chopped green onions and cilantro. 7. Enjoy your delicious pork, pepper, and rice noodle soup!
