Nigerian Meat Pies

 Here is a traditional Nigerian meat pie recipe:


Ingredients:
- 2 cups all-purpose flour - 1 teaspoon baking powder - 1/2 teaspoon salt - 1/2 cup unsalted butter, chilled and cubed - 1/4 cup cold water - 1 small onion, finely chopped - 2 cloves garlic, minced - 1/2 pound ground beef or minced meat - 1 small carrot, finely diced - 1 small potato, boiled and mashed - 1/2 teaspoon curry powder - 1/2 teaspoon thyme - 1/2 teaspoon paprika (optional) - Salt and pepper to taste - 1 egg, beaten (for egg wash) Instructions: 1. Preheat your oven to 350°F (180°C). 2. In a large bowl, combine the flour, baking powder, and salt. Add the cubed butter and rub it into the dry ingredients until the mixture resembles breadcrumbs. 3. Gradually add cold water, a little at a time, and knead the dough until it comes together. Wrap the dough in plastic wrap and refrigerate for at least 15 minutes. 4. Meanwhile, in a skillet, heat a little oil over medium heat. Sauté the chopped onions and minced garlic until fragrant and translucent. 5. Add the ground beef (or minced meat) and brown it until cooked through. Stir in the diced carrots, mashed potato, curry powder, thyme, paprika (if using), salt, and pepper. Cook for another 5 minutes. Remove from heat and let the filling cool. 6. Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Use a round cookie cutter or a glass to cut out circles. 7. Place a spoonful of the meat filling on one half of each dough circle. Fold the other half over to cover the filling and press the edges gently with a fork to seal. 8. Repeat the process until all the dough and filling are used up. 9. Place the meat pies on a baking sheet lined with parchment paper. Brush the tops with beaten egg for a shiny finish. 10. Bake in the preheated oven for about 25-30 minutes or until the pies are golden brown. 11. Remove from the oven and let them cool slightly before serving.
