Lemon-Herb Rice Salad

 Here's a recipe for lemon-herb rice salad:


Ingredients:
- 1 ½ cups cooked long-grain rice - 1 cup cherry tomatoes, halved - 1 cucumber, diced - 1 small red onion, finely chopped - ¼ cup fresh parsley, chopped - 2 tablespoons fresh dill, chopped - 2 tablespoons fresh mint, chopped - Zest of 1 lemon - Juice of 1 lemon - 3 tablespoons olive oil - Salt and pepper to taste

Instructions:
1. In a large bowl, combine the cooked rice, cherry tomatoes, cucumber, red onion, parsley, dill, and mint. 2. In a separate small bowl, whisk together the lemon zest, lemon juice, olive oil, salt, and pepper. 3. Pour the dressing over the rice mixture and toss well to combine. 4. Taste and adjust the seasoning if needed. 5. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together. 6.
