 simple recipe for fish and potato chips:

Ingredients: - 1 pound of white fish fillets (such as cod, haddock, or tilapia) - 2 large potatoes - Vegetable oil for frying - Salt and pepper to taste - Lemon wedges for serving - Tartar sauce or ketchup (optional)

Instructions:
1. Start by preparing the potato chips: Peel the potatoes and slice them into thin chips using a mandoline slicer or sharp knife. Rinse the slices under cold water to remove excess starch, then pat them dry with a kitchen towel. 2. Heat vegetable oil in a deep pan or deep fryer to around 375°F (190°C). 3. Carefully add the potato slices to the hot oil in small batches, ensuring they don't stick together. Fry them until golden brown and crispy, usually for about 5-6 minutes. Remove them using a slotted spoon and transfer to a plate lined with paper towels to drain excess oil. Sprinkle with salt to taste. 4. Preheat your oven to 400°F (200°C). Place an oven-safe wire rack on a baking sheet and set it aside. 5. Season the fish fillets with salt and pepper on both sides. Place them on the wire rack and bake in the preheated oven for about 10-12 minutes, or until the fish flakes easily with a fork and turns opaque. 6. Once the fish is cooked, serve it alongside the crispy homemade potato chips. Squeeze fresh lemon juice over the fish and chips and serve with tartar sauce or ketchup if desired.
