Chipotle Veggie Burritos

 Here is a recipe for a Chipotle-style veggie burrito:


Ingredients:
- 1 cup cooked white or brown rice - 1 can black beans, rinsed and drained - 1 cup diced bell peppers (assorted colors) - 1 cup diced onion - 1 cup diced zucchini or squash - 1 cup corn kernels - 1 tablespoon olive oil - 1 teaspoon chili powder - 1/2 teaspoon cumin - Salt to taste - 4 large flour tortillas - 1 cup shredded lettuce - 1 cup diced tomatoes - 1/2 cup chopped fresh cilantro - 1/2 cup shredded cheese (optional) - Sour cream and/or guacamole for topping (optional)

Instructions:
1. Heat olive oil in a large skillet over medium heat. Add diced onions and bell peppers, and sauté for a few minutes until they start to soften. 2. Add diced zucchini or squash, corn kernels, chili powder, cumin, and salt. Stir well and cook for an additional 5-7 minutes until vegetables are tender. 3. Stir in black beans and cooked rice. Mix everything together and cook for a few more minutes until heated through. 4. Warm the tortillas either on a skillet or in a microwave until they are pliable. 5. Place a portion of the vegetable and rice mixture in the center of each tortilla. Top it with shredded lettuce, diced tomatoes, fresh cilantro, and shredded cheese if desired. 6. Fold the sides of the tortilla over the filling, then roll it up tightly from bottom to top. 7. Serve the veggie burritos with sour cream, guacamole, or any other desired toppings.
