Here's a simple recipe for vegetable and chicken samosas:
Ingredients:
- 1 tablespoon oil
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon grated ginger
- 1 cup mixed vegetables (carrots, peas, corn, etc.), chopped
- 1 cup cooked chicken, shredded
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- Salt to taste
- 10-12 samosa wrappers (available at Asian supermarkets or use store-bought wonton wrappers)
- Water (for sealing)
- Oil (for deep frying)
Instructions:
1. Heat oil in a pan over medium heat. Add chopped onions, garlic, and grated ginger. Sauté until onions become translucent.
2. Add mixed vegetables and cook for a few minutes until they are slightly tender.
3. Add shredded chicken, cumin, coriander, turmeric, garam masala, and salt. Stir well to combine and cook for a few more minutes to blend the flavors. Remove from heat and let the filling cool.
4. Take one samosa wrapper and fold it into a triangle shape. Dab some water on the edges to secure the fold.
5. Place a tablespoon of the vegetable and chicken filling in the center of the folded wrapper.
6. Fold the samosa over from the bottom edge, sealing the filling inside. Continue folding in a triangular shape until the wrapper is completely sealed. Use water to secure the edges.
7. Repeat the process with the remaining wrappers and filling.
8. Heat oil in a deep pan or fryer over medium heat. Once the oil is hot, carefully add the samosas in small batches and fry until golden brown and crispy. Remove using a slotted spoon and place on paper towels to drain excess oil.
9. Serve hot with your favorite sauce or chutney.
