Chicken Tikka Masala

 Here's a simple recipe for Chicken Tikka Masala:


Ingredients:
- 500g boneless chicken (cut into bite-sized pieces) - 1 cup plain yogurt - 2 tablespoons lemon juice - 2 teaspoons ground cumin - 2 teaspoons ground coriander - 1 teaspoon paprika - 1 teaspoon turmeric - 1 teaspoon garam masala - 1 teaspoon chili powder (adjust to taste) - 2 tablespoons vegetable oil - 1 large onion (chopped) - 3 garlic cloves (minced) - 1-inch piece of ginger (grated) - 1 can (400g) crushed tomatoes - 1 cup heavy cream - Salt to taste - Fresh coriander leaves for garnish

Instructions:
1. In a bowl, mix together yogurt, lemon juice, cumin, coriander, paprika, turmeric, garam masala, and chili powder. Add the chicken pieces to the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes or overnight in the refrigerator. 2. Preheat the oven to 200°C (400°F). Place the marinated chicken on a baking tray and bake for about 15-20 minutes until the chicken is cooked and slightly charred at the edges. 3. In a large pan, heat the vegetable oil over medium heat. Add the chopped onions and cook until they are soft and golden brown. 4. Stir in the minced garlic and grated ginger, and cook for another minute. 5. Add the crushed tomatoes to the pan and simmer for about 5 minutes, stirring occasionally. 6. Pour in the heavy cream and season with salt to taste. Stir well and let the sauce simmer for another 5 minutes. 7. Add the baked chicken tikka pieces to the pan with the sauce. Stir gently to coat the chicken evenly with the sauce. 8. Simmer for an additional 5-10 minutes or until the chicken is fully cooked and tender. 9. Garnish with fresh coriander leaves and serve hot with rice or naan bread.
