Bunny chow

 Bunny chow is a popular South African street food dish that consists of a hollowed-out loaf of bread filled with a spicy curry. Here's a basic recipe to make bunny chow:


Ingredients:
- 1 large loaf of unsliced bread (preferably round or oval) - 500g boneless chicken, lamb, beef, or vegetables (diced) - 2 tablespoons vegetable oil - 1 onion, finely chopped - 2 garlic cloves, minced - 1 thumb-sized piece of ginger, grated - 2 tablespoons curry powder (adjust according to your preference) - 1 teaspoon turmeric powder - 2 tomatoes, chopped - Salt to taste - Freshly ground black pepper - Chopped coriander leaves for garnish (optional)

Instructions:
1. Start by preparing the bread. Cut the loaf in half horizontally, and scoop out the soft bread from the center, creating a hollow bread bowl. Set aside the scooped-out bread for later use. 2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion turns translucent and fragrant. 3. Add the diced meat or vegetables to the pot and cook until browned (if using meat). If using vegetables, sauté until slightly tender. 4. Stir in the curry powder and turmeric powder, ensuring the meat or vegetables are well-coated. Cook for a minute or two to release the flavors. 5. Add the chopped tomatoes and season with salt and black pepper. Stir well. 6. Reduce the heat to low, cover the pot, and let the curry simmer for about 30-40 minutes (adjust cooking time depending on the type of meat or until the vegetables are cooked to your liking). Stir occasionally and add a little water if needed. 7. While the curry simmers, lightly toast the scooped-out bread pieces in a separate pan or grill them until crisp. 8. Once the curry is ready, spoon it into the hollowed-out bread bowl, filling it generously. 9. Garnish with chopped coriander leaves (if desired) and place the toasted bread on top to cover the filling. 10. Serve the bunny chow hot and enjoy it with your hands, breaking off a piece of the bread bowl and dipping it into the spicy curry.
