Here's a recipe for chicken tikka masala that can be cooked in a slow cooker:
Ingredients:
- 1 1/2 lbs boneless, skinless chicken thighs
- 1 cup plain yogurt
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 2 tbsp garam masala
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 1/2 cups tomato sauce
- 3/4 cup heavy cream
- Salt and pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Naan bread and cooked rice (for serving)
Instructions:
1. Combine the yogurt, onion, garlic, ginger, tomato paste, olive oil, garam masala, cumin, paprika, cayenne pepper, and salt and pepper in a large bowl.
2. Add the chicken and coat it in the marinade.
3. Cover the bowl and let it marinate in the fridge for at least 1 hour, or overnight.
4. When ready to cook, transfer the chicken and marinade to a slow cooker.
5. Add the tomato sauce and stir to combine.
6. Cook on low for 4-6 hours or high for 2-3 hours, until the chicken is cooked through and tender.
7. Stir in the heavy cream and let it cook for another 10-15 minutes.
8. Serve with naan bread and cooked rice, garnished with fresh cilantro.
