Baked Potatoes with Broccoli and Cheddar

 Here's a recipe for baked potatoes with broccoli and cheddar:


Ingredients:
- 4 large baking potatoes - 2 cups broccoli florets - 1 cup shredded cheddar cheese - 1/4 cup sour cream - 2 tablespoons butter - Salt and pepper to taste

Instructions:
1. Preheat your oven to 400°F (200°C). Scrub the potatoes clean and pat them dry with a paper towel. 2. With a fork, pierce each potato a few times to allow steam to escape during baking. Rub the potatoes with olive oil and sprinkle with salt. 3. Place the potatoes directly on the oven rack and bake for about 50-60 minutes, or until they are tender when pierced with a fork. 4. While the potatoes are baking, steam the broccoli florets until they are just tender. Drain and set aside. 5. Once the potatoes are done, remove them from the oven. Let them cool slightly until you can handle them. 6. Cut a slit lengthwise across the top of each potato. Use a fork to gently fluff the insides of each potato. 7. Place a pat of butter inside each potato, then add a spoonful of sour cream, steamed broccoli, and shredded cheddar cheese. Season with salt and pepper to taste. 8. Return the stuffed potatoes to the oven and bake for an additional 5-10 minutes, or until the cheese has melted and is bubbly. 9. Remove from the oven and let cool for a few minutes before serving.
