Ingredients:
- 1 cup all-purpose flour
- 1/4 tsp. salt
- 1/2 cup boiling water
- 1/4 cup thinly sliced green onions/scallions
- 1 tbsp. vegetable oil
Instructions:
1. In a mixing bowl, combine the flour and salt. Mix together well.
2. Slowly pour the boiling water into the bowl, stirring with a fork to create a shaggy dough.
3. Knead the dough for about 5 minutes, either in the bowl or on a floured surface, until it is smooth and elastic.
4. Cover the dough with a damp towel and let it rest for at least 30 minutes.
5. Once the dough has rested, divide it into 4 equal portions. Roll out each portion into a thin disc, about 6-8 inches in diameter.
6. Spread a thin layer of vegetable oil onto each disc, then sprinkle sliced green onions/scallions evenly over the surface.
7. Starting from one end, roll up the disc into a spiral shape.
8. Coil the spiral into a circle, then gently flatten the dough out to form a pancake.
9. Heat a non-stick pan or griddle over medium-high heat. Once hot, add a small amount of vegetable oil to the pan.
10. Cook each pancake for 2-3 minutes on each side, until they are golden brown and crispy.
11. Serve the scallion pancakes hot, with your favorite dipping sauce. Enjoy!
