Here is a recipe for Raspberry Brulee:
Ingredients:
- 1 cup heavy cream
- 3 egg yolks
- 3 tablespoons sugar
- 1 teaspoon vanilla extract
- 1/2 cup fresh raspberries
- 1/4 cup granulated sugar for topping
Instructions:
1. Preheat oven to 325°F.
2. In a medium saucepan, heat the heavy cream just until it starts to simmer.
3. In a large mixing bowl, whisk together the egg yolks, sugar, and vanilla extract until well combined.
4. Slowly pour the hot cream into the egg mixture while whisking constantly.
5. Add the raspberries and whisk again to combine.
6. Pour the mixture into 4 oven-safe ramekins or custard dishes.
7. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
8. Bake for 25-30 minutes or until the custard is set but still slightly jiggly in the center.
9. Remove the ramekins from the water bath and let them cool to room temperature.
10. Refrigerate the custards for at least 2 hours or overnight.
11. Just before serving, sprinkle each custard with about a tablespoon of granulated sugar.
12. Use a kitchen torch to caramelize the sugar until it turns golden brown and crispy. Alternatively, place the ramekins under the broiler for 1-2 minutes until the sugar melts and caramelizes.
13. Let the brulees sit for a minute or two to cool down before serving. Enjoy!
