Congee Chinese Rice Recipe

 Ingredients:


- 1 cup white rice

- 6 cups water or chicken or vegetable broth (or a combination)

- 1 tablespoon vegetable oil

- 1 small onion, diced

- 2 cloves garlic, minced

- 1 teaspoon grated ginger

- Salt, to taste

- Optional toppings: chopped scallions, cilantro, sliced cooked chicken, sliced boiled eggs, roasted peanuts, soy sauce, sesame oil


Instructions:


1. Rinse the rice in a fine-mesh strainer until the water runs clear and drain it well.


2. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the diced onion and sauté until softened and translucent, about 5 minutes.


3. Add the minced garlic and grated ginger and sauté for another minute until fragrant.


4. Add the rice to the pot and stir to coat it in the onion and garlic mixture.


5. Add the water or broth and stir to combine.


6. Bring the mixture to a boil, then reduce the heat to low and simmer, stirring occasionally, until the rice grains have burst and the porridge has thickened to your liking, about 1 to 2 hours.


7. Season the porridge with salt, to taste.


8. Serve hot with your preferred toppings, such as chopped scallions, cilantro, sliced cooked chicken, sliced boiled eggs, roasted peanuts, soy sauce, or sesame oil.
