chicken tikka

Here's a simple yet delicious chicken tikka recipe:

Ingredients:

- 1 pound boneless, skinless chicken breasts, cut into bite-sized cubes

- 1/2 cup plain yogurt

- 1 tablespoon lemon juice

- 1 tablespoon vegetable oil

- 2 garlic cloves, minced

- 1 tablespoon grated ginger

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1/2 teaspoon turmeric

- 1/2 teaspoon smoked paprika

- 1/4 teaspoon cinnamon

- Salt and pepper to taste

- Skewers (if grilling)

Instructions:

1. In a large bowl, whisk together the yogurt, lemon juice, vegetable oil, garlic, ginger, cumin, coriander, turmeric, paprika, cinnamon, salt, and pepper.

2. Add the chicken to the marinade and mix until the chicken is coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least an hour (or up to overnight).

3. If grilling, preheat your grill to medium-high heat. Thread the chicken onto skewers and place on the grill. Cook for about 12-15 minutes, or until the chicken is cooked through and slightly charred.

4. If using an oven, preheat it to 400°F. Line a baking sheet with parchment paper and place the chicken skewers on the sheet. Bake for 20-25 minutes, or until the chicken is cooked through and slightly charred.

5. Serve with rice, naan, and fresh cilantro for garnish. Enjoy!
