Goi cuon

 Here's a basic recipe for Goi Cuon, which is Vietnamese fresh spring rolls:


Ingredients:
- Rice paper wrappers - Vermicelli rice noodles - Cooked shrimp or grilled chicken (or tofu for a vegetarian option) - Fresh herbs (such as basil, mint, and cilantro) - Lettuce leaves - Bean sprouts - Julienned carrots - Sliced cucumber - Crushed peanuts (optional) - Hoisin sauce or peanut dipping sauce for serving

Instructions:
1. Prepare the ingredients by cooking the rice noodles according to package instructions, boiling the shrimp or grilling the chicken/tofu, and slicing all the vegetables and herbs. 2. Fill a large shallow dish or pan with warm water. Dip one rice paper wrapper in the water for a few seconds until it softens. Make sure to fully wet it, but be careful not to oversoak it as it will become too sticky to work with. 3. Lay the softened rice paper wrapper on a clean surface or a damp kitchen towel. 4. On the bottom third of the wrapper, place a few lettuce leaves, some vermicelli noodles, a few shrimp or chicken/tofu slices, fresh herbs, bean sprouts, carrots, cucumber, and crushed peanuts (if using). 5. Fold the sides of the rice paper wrapper over the filling, then tightly roll it up from the bottom. 6. Repeat the process with the remaining ingredients. 7. Serve the Goi Cuon rolls with a side of hoisin sauce or peanut dipping sauce. They are best enjoyed fresh!
