Chili crab

 Here's a simple recipe for chili crab:


Ingredients:
- 2 large crabs - 4 tablespoons vegetable oil - 5 cloves garlic, minced - 1 thumb-sized piece of ginger, minced - 2 to 3 red chili peppers, sliced (adjust according to your spice preference) - 1 tablespoon tomato paste - 2 tablespoons sweet chili sauce - 2 tablespoons soy sauce - 2 tablespoons oyster sauce - 2 teaspoons sugar - 1 cup chicken or vegetable broth - 2 tablespoons cornstarch, dissolved in 3 tablespoons water - Scallions (green onions), chopped (for garnish) - Fresh coriander, chopped (for garnish) - Lime wedges (optional, for serving)

Instructions:
1. Clean and prep the crabs by removing their shells and gills. Crack the claws slightly for easier eating. 2. Heat the vegetable oil in a large wok or deep pan over medium heat. 3. Sauté the minced garlic, ginger, and sliced chili peppers until fragrant and slightly softened. 4. Add the tomato paste, sweet chili sauce, soy sauce, oyster sauce, and sugar to the pan. Stir well to combine. 5. Pour in the chicken or vegetable broth and bring it to a simmer. 6. Gently place the prepared crabs into the pan, ensuring they are fully submerged in the sauce. 7. Cover the pan and let the crabs cook for about 10-15 minutes, or until they turn bright orange and the meat is fully cooked. 8. Once the crabs are cooked, remove them from the pan and set them aside on a serving platter. 9. Stir the cornstarch-water mixture to make sure the cornstarch is fully dissolved, then pour it into the pan with the sauce. 10. Stir the sauce continuously until it thickens, creating a glossy texture. 11. Once the sauce has thickened, pour it over the cooked crabs. 12. Garnish with chopped scallions, coriander, and lime wedges, if desired. 13. Serve hot with steamed rice or mantou (Chinese steamed buns) to soak up the delicious sauce.
