Szechuan chicken

 Here is a simple and delicious recipe for Szechuan chicken:



Ingredients:


- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

- 1/4 cup cornstarch

- 2 tablespoons vegetable oil

- 1 tablespoon minced garlic

- 1 tablespoon minced ginger

- 1/4 cup soy sauce

- 3 tablespoons rice vinegar

- 2 tablespoons brown sugar

- 1 tablespoon sriracha sauce (or more to taste)

- 1/4 teaspoon red pepper flakes

- 1/4 cup chopped scallions

- Steamed rice and additional scallions for serving


Instructions:


1. In a shallow bowl, toss the chicken with cornstarch until all pieces are evenly coated.


2. Heat the vegetable oil in a large skillet or wok over high heat. Add the chicken and stir-fry for 4-5 minutes, until golden brown and cooked through.


3. Remove the chicken from the skillet and set aside. Add the garlic and ginger to the skillet and stir-fry for 30 seconds.


4. In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, sriracha, and red pepper flakes. Pour the mixture into skillet and stir-fry for 1-2 minutes, until the sauce thickens.


5. Add the cooked chicken back to the skillet and toss to coat in the sauce. Stir in the chopped scallions.


6. Serve the Szechuan chicken over steamed rice and garnish with additional scallions, if desired. Enjoy!
