Here's an easy recipe for beef kare-kare:
Ingredients:
-1 kg beef tripe (or beef sirloin, oxtail, or shank)
-1 onion, chopped
-3 cloves garlic, minced
-2 tbsp annatto powder
-1 cup peanut butter
-3 cups water
-2 bundles pechay (bok choy)
-1 bundle sitaw (string beans)
-1 eggplant, sliced
-2 tbsp fish sauce
-1 tbsp sugar
-1 tbsp cooking oil
Instructions:
1. In a pot, boil the beef in 3 cups of water until tender. If using tripe, simmer for 1-2 hours. If using beef sirloin, shank, or oxtail, simmer for about 2-3 hours.
2. Once the beef is tender, remove it from the pot and slice it into bite-size pieces. Set aside the broth.
3. In a separate pan, sauté the garlic and onion in cooking oil.
4. Add the annatto powder and stir until the oil turns orange.
5. Add the peanut butter and mix well.
6. Gradually pour the broth while stirring the mixture.
7. Add the sliced beef and bring to a boil.
8. Lower the heat and add the pechay, sitaw, and eggplant.
9. Season with fish sauce and sugar.
10. Simmer for another 10-15 minutes until the vegetables are cooked and the sauce has thickened.
11. Serve hot with bagoong (shrimp paste) on the side.
